Blins with Caviar
- 10 oz whole milk
- 3.5 oz wheat flour
- 1 egg
- red onion
- fresh parsley
- fresh dill
- 4 oz of Cavair Dreams "Sevruga" caviar
In a bowl mix together blin batter by combining milk, flour, and egg. Make sure there are no clumps in the batter. To make the blins: preheat a medium size skillet.
Repeat for each blin: 1. wipe the entire cooking surface of the skillet with 1/4 oz of unsalted butter 2. pour 1/4 cup (8" skillet) of the batter in the center of the skillet, you may
tilt the skillet to help the batter cover the surface evenly. Fry each side for about 1 minute, use a broad spatula to loosen the blin before flipping it over. 3. once ready,
transfer the blin to a plate, lightly wipe the surface with butter. Repeat until all batter is used, stack blins as you transfer them from the skillet. Finley chop onions and dill.
Place chopped garnish and 1/2 tea spoon of caviar on each blin and roll into a tube. Sprinkle with lemon juice, cut in half and serve.
