Caviar Volauvent
- puff pastry dough(your own or ready doe)
- egg white from 1 egg
- yolkes (hardboiled)
- provolone cheese
- lemon slices
- lemon juice
- unsalted butter
- 12 oz of Cavair Dreams Black Label caviar
On a flower sprinkled surface roll the dough to a thickness of 1/8" (0.5cm). With round 3" (7cm) cookie cutter create an even number of circle shapes. With a 1.5" (3cm) smaller
cookie cutter remove the center portion in one half of the dough shapes. Brush the whole parts with egg white and place the dough rings on top. Bake on a lightly buttered cookie sheet
at 425 F (220 C) for 15 - 20 minutes, until evenly golden. In a mixing bowl combine (per pastry) 1/4 table spoon of butter, 1/4 egg yolk, 1/2 table spoon grated cheese. Place the mix in
the center of each pastry, top with 1 tea spoon of caviar. Sprinkle with lemon juice and garnish with a lemon slice. Serve warm.
